Easter surprise cake

This is probably one of the recipes you have been requesting more since I published my first cook book “Las recetas de la felicidad

. Unfortunately the book has only been released in Spanish, and for my English readers I wanted to share a version in English as well, so here you have it! Please give it a try, I am sure you will love it! It is a plain vanilla pound cake, which hides a surprise chocolate bunny inside.

Prep time: 45 minutes

Cooking time: 2 x 45 min

Serves: 12

Ingredients

    Chocolate pound cake:

  • 250 g butter, room temperature
  • 200 g sugar
  • 4 eggs, medium size
  • 250 g flour
  • 40 g unsweetened cocoa powder
  • 1 pinch of salt
  • 1 tsp baking powder
  • Vanilla pound cake:

  • 250 g butter, room temperature
  • 200 g sugar
  • 4 eggs, medium size
  • 250 g flour
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 1 tsp baking powder
  • Directions

    1. Preheat oven to 350º F and prepare a loaf cake pan. In a large bowl, place sugar and butter (room temperature) and beat until light and fluffy. Add eggs, one at a time, until well integrated. Add cocoa, flour, baking powder and salt, and mix until combined. Pour cake batter on the prepared pan, and bake for about 45 minutes. Let the cake cool inside the pan for 15 minutes, and then invert on a wire rack and leave until completely cooled.
    2. Cut cold chocolate bread into large slices. Cut rabbit shapes from slices, using a cookie cutter. Align them down the center of a lightly greased and floured loaf pan. Freeze for at least one hour
    3. Then prepare your vanilla cake batter. In a large bowl, place sugar and butter (room temperature) and beat until light and fluffy. Add eggs, one at a time, until well integrated. Add vanilla, flour, baking powder and salt, and mix until combined. Pour the batter over your chocolate cake in the pan. Try not to overfill the pan. Bake for about 40 minutes. Let the cake cool inside the pan for 15 minutes, and then invert on a wire rack and leave until completely cooled.

    I would like to make the cake ,but want to make it without the butter and don’t want margarine what can I replace it with please ?
